Hot Chocolate & Marshmallows

A few weekends ago, I had homemade hot chocolate for the first time. I immediately hit Pintrest (duh) for a recipe. I HAD to make some myself! I also got the idea to make my own marshmallows to go with it.

I started the marshmallows on Friday evening and let them set up overnight. 
I've never made anything like this before! It was fun to watch Karo syrup, sugar, gelatin, peppermint extract, etc... turn into a white whipped mixture. I added the green food color for some Christmas swirl.

In the morning we added the peppermint powdered coating.
And my homemade peppermint marshmallows were a success!

On to the hot chocolate.

So easy! All the ingredients are added to the crockpot at once and set to "low" for two hours, stirring occasionally. 
We've enjoyed a few cups of hot chocolate and peppermint marshmallows today!

Such a fun, warm treat on such a freezing Spokane December day.
